In the vineyard
2021 was a stunning vintage in the Adelaide Hills. A mild summer with light rainfall at all the right times and cool overnight temperatures gave way to slow ripening fruit with excellent sugar / acid balance and ripe tannins. Hand picked from 25 year old vines planted on a gentle Eastern aspect, the fruit arrived at the winery in perfect condition.
In the winery
Approximately 25% of the fruit was placed in the bottom of small open fermenters and the rest was destemmed (but not crushed) on top. Fermentation proceeded using indigenous yeasts and took about 3 weeks weeks to complete. Total maceration time on skins was 4 weeks. Once pressed, the wine was matured in French oak hogsheads (25% new) for 8 months. This wine has not been fined or filtered and therefore may form a deposit in the bottle after a few years.
Food Match
The silky tannins and marked acidity in this wine perfectly complement rich, creamy dishes such as mushroom rissotto. Equally satisfying are pork and duck, or simply enjoy the wine on its own.
