Blending of grape varieties
This wine is a blend of two grape varieties, from two regions. The main component (96%) is Nero d’Avola from Kersbrook (Adelaide Hills). This fruit provides juicy, vibrant black cherry and red plum flavours with a floral lift dominated by violets and Mediterranean herbs. To this, Pinot Noir from Kuitpo (Adelaide Hills) has been blended, contributing to the vibrant structure of this wine.
Winemaking
This wine has been made with minimal intervention to showcase the fresh fruit flavours. A relatively cool fermentation (22-24C)on skins, with gentle hand-plunging for one week. Pressing occurred approximately 3/4 the way through fermentation to avoid extraction of harsh tannins from the grape seeds, yielding a very soft, fresh and fruity style.
Food match
Being soft and fruity, this is very much a red wine for people who normally prefer whites or roses. Drink slightly shilled with summer barbecues, pasta dishes and a wide range of seafoods.
