Blending of grape varieties
This wine is 100% Chardonnay, from two different regions. The main component (55%) is from Kersbrook (Adelaide Hills). This fruit provides grapefruit and lemon characters along with elegance and length to the palate. To this, Chardonnay from Willunga (McLaren Vale) has been blended. Being a warmer climate, McLaren Vale fruit fills out the mid palate and gives a burst of ripe melon and nectarine fruit.
Winemaking
The Adelaide Hills fruit was whole bunch pressed to maintain the fruit’s delicacy, while the McLaren Vale fruit received some skin contact,, contributing texture and fruit intensity. Both parcels were fermented separately in neutral French oak barriques where they remained on lees for 5 months before blending. the wine underwent partial malolactic fermentation to soften the acidity.

A perfect food wine that pairs well with fish, pasta, poultry and soft cheeses.
