I began learning the art of blending under the tutelage of M. Guy Jacopin in Champagne. He didn’t speak a word of English, nor did I speak any French, yet he was able to teach me so much. On several occasions, we sat chatting and tasting wines as he demonstrated to me the contribution that different grape varieties made as well as different vineyards of the same varieties.

Whereas my single vineyard wines are all about expressing specific terroirs, my “Jacopin” wines showcase the art of blending and the language of wine.

Description

Blending of grape varieties

This wine is a unique blend of Pinot Gris and Riesling. The Pinot Gris (89% of the blend) comes from Kersbrook in the Adelaide Hills and contributes vibrant pear and nectarine fruit aromas and flavours as well as a soft, round palate. The Riesling (11%) is from the Clare Valley contributes subtle citrus notes to the aroma along with zesty acidity on the palate.

Winemaking

This wine has been made with minimal intervention to showcase the fruit flavours.  The Pinot Gris was fermented in neutral French oak barriques where it remained on lees for four months.  Barrel fermentation contributes a fine, silky texture while ageing on lees contributes subtle creaminess to the mouthfeel.

Food match

A refreshing wine at its best while young and fruity.  Enjoy with summer salads, a wide range of seafood and shellfish, or simply on its own.
