Blending of terroirs
This wine is 100% Chardonnay from two different terroirs. The main component (approximately 70%) is from a relatively high-altitude vineyard. The fruit from here provides grapefruit and lemon characters along with elegance and length on the palate. To this, Chardonnay from a lower-altitude, (warmer) vineyard has been blended. Being a slightly warmer location, this fruit fills out the mid palate and gives a burst of ripe melon and nectarine fruit flavours.
Winemaking
Both parcels were fermented separately in seasoned French oak barrels where they remained on lees for 10 months before blending. The wine underwent partial malolactic fermentation (approximately 40%) to soften the acidity.
Food match
A perfect food wine that pairs well with fish, pasta, poultry and soft cheeses.
